Minimal Intervention
Our winemaker, Julien Fayard, believes in minimal intervention winemaking: minimizing inputs and manipulation to achieve the purest expression of the vineyard.
Organically Farmed
The Somnium Estate vineyard is CCOF-certified organic and has been tended with organic methods since our very first vines were planted.
Vegan
No animal products are added to any of our wines. Instead of egg whites or gelatin, we use pea protein for fining when needed. (Fining removes particulate matter that can make wine cloudy or unstable.)
Gluten Free
Grapes are naturally gluten free, and our minimal intervention winemaking maintains that purity.
Minimal Sugar
Somnium wines are fermented dry, meaning all fermentable sugars are eliminated during winemaking. Non-fermentable sugars, like xylose and arabinose, do remain in trace amounts (under 2 grams per liter, less than ⅓ gram per glass). No additional sugar is added.
Low Sulfites
Sulfites are naturally occurring chemical compounds that help to preserve wine by preventing the growth of bacteria and other spoiling agents. We add only the smallest amount necessary, so our wines contain less than 50 parts per million (ppm). The legal limit for wine is 350 ppm.
* All wines with more than 10 ppm are required by U.S. law to carry a "Contains Sulfites" label. Since fermentation itself produces some sulfites, nearly all wines carry this warning, regardless of whether sulfites were added by the winemaker.
